
While you can get by on bars, jerky and trail mix, you don’t have to. You can have delicious and nutritious meals without adding a lot of weight to your pack. I recently did a two-nighter in Texas and shown above is a meal plan for that trip.
It includes:
Day 1 – Homemade spicy pozole for dinner, with cinnamon chips for desert. These were both new recipes and both proved to be winners. I will include them in an upcoming food review.
Day 2 – Coffee, oatmeal and breakfast bar for breakfast. I generally try to keep my breakfast to minimal clean-up. Tuna salad wrap and energy bar for lunch. Homemade chili and banana nut bread pudding for dinner.
Day 3 – Breakfast/energy bars for breakfast since I’ll be hiking out in the dark.
Other – Tortillas for multiple meals. Trail mix, a Snickers, and homemade fruit rollups for snacking. I also brought some breading in the slight chance I caught some white bass (I did not).
